Apple Tortilla

  1. Peel and core the three apples, then mince them finely. Place the minced apples in a heavy pan with the sugar and a small amount of manteca de vaca (beef lard). Cook over moderate heat, stirring constantly with a wooden spoon until the mixture becomes a smooth paste (masa).
  2. Beat the three eggs in a bowl. Add the apple paste to the beaten eggs and mix well.
  3. Heat manteca de vaca in a skillet and cook the mixture as you would a tortilla (a thick, set omelette), until golden and cooked through.
