Migas (Fried Bread with Cheese and Egg Yolks)

Ingredients
- 1/2 lb chancho (pork) fat
- 2 large heads onion, finely chopped
- 4 cloves garlic, ground
- 1 tbsp pimentón (paprika)
- salt
- 5 medium bread rolls, soaked in milk
- 1/2 lb fresh cheese, chopped
- 6 egg yolks, lightly beaten
- olives
- boiled yuca (cassava), in little pieces
Instructions
- Fry finely chopped onion, ground garlic, pimentón, and salt in half a pound of pork fat until the onion takes color.
- Add five milk-soaked, wrung-out, broken-up bread rolls, stirring continuously so they do not burn.
- After the first boil, add half a pound of chopped fresh cheese.
- A moment before removing from the fire, stir in six lightly beaten egg yolks.
- Serve garnished with olives and pieces of boiled yuca.
