Migas (Fried Bread with Cheese and Egg Yolks)

Ingredients

Instructions

  1. Fry finely chopped onion, ground garlic, pimentón, and salt in half a pound of pork fat until the onion takes color.
  2. Add five milk-soaked, wrung-out, broken-up bread rolls, stirring continuously so they do not burn.
  3. After the first boil, add half a pound of chopped fresh cheese.
  4. A moment before removing from the fire, stir in six lightly beaten egg yolks.
  5. Serve garnished with olives and pieces of boiled yuca.
