Meat Dressing

Ingredients
- 1 peck young carrots
- 1 dozen red skin onions
- 1 dozen cauliflowers
- 2 gallons vinegar
- 2 tablespoonfuls ground black pepper
- 1 tablespoonful cayenne pepper
- 1 teacupful salt
- 1 teacupful brown sugar
- 2 teacupfuls vinegar
Instructions
- Mix together the grated carrots, onions, and cauliflowers.
- Put the mixed vegetables to cook, adding two gallons of vinegar.
- Season with ground black pepper, cayenne pepper, and salt, stirring well to incorporate.
- Place one teacupful of brown sugar in a frying pan on the fire.
- Cook the sugar until it turns a dark brown.
- Pour two teacupfuls of vinegar into the browned sugar and stir well.
- Strain the caramel-vinegar mixture through a sieve into the kettle containing the cooking vegetables.
- Let the entire dressing cook slowly for one day.
