Frozen Flan (Flan Helado)

Ingredients
- 1 glass milk
- 10 céntimos worth coffee beans
- 2 egg yolks
- sugar
- 2 egg whites
- 4 gelatin sheets
- ice
Instructions
- Heat the milk with the coffee beans until fragrant; strain and set aside to cool slightly.
- Beat the egg yolks with sugar until pale and thick. Beat the egg whites separately to stiff peaks (punto de nieve).
- Combine the yolks and cooled milk, then place over gentle heat (or in a water bath), stirring constantly as for a custard (bizcochada), until it thickens slightly and coats the back of a spoon. Do not boil.
- Remove from heat. While still warm, unfold the gelatin sheets one at a time, stirring each into the hot custard until fully dissolved.
- Fold the beaten egg whites gently into the warm mixture until no streaks remain.
- Line a mold or colander with damp flannel cloth (franela mojada). Pour the mixture in and surround with ice until it sets completely. Unmold when firm.
