Turtle Soup (Sopa de Tortuga)

Ingredients
- 2 libras turtle meat
- 3 onzas butter
- 4 cloves garlic, ground
- 2 onzas maní (peanuts), toasted and ground
- onion, in rounds
- tomato juice
- parsley, chopped
- salt
- 4 tazas good broth
- 1 glass wine
- pepper
Instructions
- Wash two pounds of turtle meat well and place it in an enameled casserole.
- Fry it with three ounces of butter, adding four ground garlic cloves, two ounces of toasted and ground peanuts (maní), onion rounds, tomato juice, chopped parsley, and salt.
- When everything is well fried, pour in four cups of good broth and a glass of wine.
- Season and let it boil until the turtle is well cooked.
- Dust with pepper in the tureen.
