Rice with Picadillo

Ingredients
- white rice
- manteca (lard)
- jamón (cured ham)
- lomo (pork loin)
- ternera (veal)
- garlic
- pimiento encarnado (red pepper or pimentón)
- black pepper
- nutmeg
Instructions
- Prepare white rice according to the preceding formula. In a separate pan, heat manteca (lard) and fry a picadillo (mixture of diced jamón, lomo, and ternera with garlic). Before frying, marinate the picadillo briefly in adobo (spiced vinegar). Season with pimiento encarnado, black pepper, and nutmeg. Place the seasoned picadillo in the center of a serving dish and arrange the cooked rice around it as a garnish.
