Carmelita Chickpea Stew

Ingredients
- garbanzos (chickpeas)
- 1 garlic clove
- olive oil
- 1 onion
- tomato
- 1 slice bread
- 3 hard-boiled egg yolks
- warm water
- salt
Instructions
- Soak the garbanzos (chickpeas) overnight in water and salt.
- Rinse them and put them in a pot with warm water to cook.
- In a separate pan, fry a garlic clove in olive oil, then discard it.
- In that same oil, fry the diced onion and a little tomato.
- When the garbanzos are nearly cooked through, add the fried onion and tomato mixture to the pot and stir to combine.
- Shortly before serving, fry a slice of bread in oil.
- Pound the fried bread together with the hard-boiled egg yolks in a mortar, crushing well until you have a fine paste.
- Stir this mixture into the garbanzos and simmer briefly to incorporate.
