Origin: Madrid, Spain
Source: Anonymous, 1920
Ingredients
- garbanzos (chickpeas)
- 1 garlic clove
- olive oil
- 1 onion
- a little tomato
- 1 slice bread
- 2–3 hard-boiled egg yolks
- warm water
- to taste salt
Instructions
- Soak the garbanzos (chickpeas) overnight in water and salt. Rinse them and put them in a pot with warm water to cook.
- In a separate pan, fry a garlic clove in olive oil until golden, then discard it. In that same oil, fry the diced onion and a little tomato until soft and fragrant.
- When the garbanzos are nearly cooked through, add the fried onion and tomato mixture to the pot and stir to combine.
- Shortly before serving, fry a slice of bread in oil until golden. Pound the fried bread together with the hard-boiled egg yolks in a mortar, crushing well until you have a fine paste. Stir this mixture into the garbanzos and simmer briefly to incorporate.
