  1. Soak the garbanzos (chickpeas) overnight in water and salt. Rinse them and put them in a pot with warm water to cook.
  2. In a separate pan, fry a garlic clove in olive oil until golden, then discard it. In that same oil, fry the diced onion and a little tomato until soft and fragrant.
  3. When the garbanzos are nearly cooked through, add the fried onion and tomato mixture to the pot and stir to combine.
  4. Shortly before serving, fry a slice of bread in oil until golden. Pound the fried bread together with the hard-boiled egg yolks in a mortar, crushing well until you have a fine paste. Stir this mixture into the garbanzos and simmer briefly to incorporate.
