Carmelita Chickpea Stew

Ingredients

Instructions

  1. Soak the garbanzos (chickpeas) overnight in water and salt.
  2. Rinse them and put them in a pot with warm water to cook.
  3. In a separate pan, fry a garlic clove in olive oil, then discard it.
  4. In that same oil, fry the diced onion and a little tomato.
  5. When the garbanzos are nearly cooked through, add the fried onion and tomato mixture to the pot and stir to combine.
  6. Shortly before serving, fry a slice of bread in oil.
  7. Pound the fried bread together with the hard-boiled egg yolks in a mortar, crushing well until you have a fine paste.
  8. Stir this mixture into the garbanzos and simmer briefly to incorporate.
