  1. Kill a fat four-month-old chicken, reserving the blood; cook the blood with the gizzard, liver, and heart in two boils in lightly salted water.
  2. Chop and season these to make the stuffing for the chicken.
  3. Pluck, wash, and dry the bird in a napkin, then brush it all over with a beaten mixture of oil, vinegar, pepper, salt, and ground parsley.
  4. Roll it in breadcrumbs and grill or spit-roast over a well-lit but moderate fire.
  5. As the breading crusts, turn once or twice, brush again with the oil-and-vinegar mixture, and raise the heat; repeat up to three times until golden.
  6. Brush once more very lightly as it goes to the table.
