Simple Sponge Cake

Ingredients
- 3 egg yolks
- 3 tablespoons sugar
- lemon zest
- 3 egg whites egg whites
- 3 tablespoons flour
- manteca (lard)
Instructions
- Beat the egg yolks with the sugar and grated lemon zest until pale and smooth. In a separate bowl, beat the egg whites to stiff peaks (punto de nieve). Fold the whites gently into the yolk mixture, continuing to beat. Add the flour and mix thoroughly to combine. Butter a mold generously with manteca and pour in the batter. Bake in a gentle oven (horno suave) until set and lightly golden.
