Stuffed Potato Fritters (Embozo de Papas)

Ingredients

Instructions

  1. Boil the potatoes unpeeled, then peel and mash them into a dough.
  2. Add four beaten eggs, butter, and salt; mix well and, if loose, work in flour little by little to firm the dough.
  3. Separately cook in seasoned butter the finely chopped onion, tomato, parsley, and cooked meat, with spices.
  4. Add almonds, raisins, toasted ground peanut, and sliced hard-boiled eggs; stir until the onion is cooked, then remove from the fire.
  5. Cut the potato dough into portions, place filling in the center, wrap, and shape into an enlarged potato with well-floured hands.
  6. Fry in butter, turning to brown evenly, and serve without sauce, garnished with parsley sprigs and mint shoots.
