Stuffed Potato Fritters (Embozo de Papas)

Ingredients
- potatoes
- 4 eggs
- butter
- salt
- flour
- spices (especias)
- onion
- tomato
- parsley
- cooked meat
- almonds
- raisins
- toasted ground peanut (maní)
- hard-boiled eggs
- mint (hierba buena)
Instructions
- Boil the potatoes unpeeled, then peel and mash them into a dough.
- Add four beaten eggs, butter, and salt; mix well and, if loose, work in flour little by little to firm the dough.
- Separately cook in seasoned butter the finely chopped onion, tomato, parsley, and cooked meat, with spices.
- Add almonds, raisins, toasted ground peanut, and sliced hard-boiled eggs; stir until the onion is cooked, then remove from the fire.
- Cut the potato dough into portions, place filling in the center, wrap, and shape into an enlarged potato with well-floured hands.
- Fry in butter, turning to brown evenly, and serve without sauce, garnished with parsley sprigs and mint shoots.
