  1. Clean the pork loin of fat and cut it into thin round slices. Prepare the adobo (marinade) by crushing garlic and oregano together. Once ground, add vinegar, red pimentón (Spanish smoked paprika), a little water, and salt. Place the pork slices in this marinade and let sit for twenty-four hours. After the marinating time, fry the pieces and serve on an arranged platter.
