Roasted Beef Loin

Ingredients
- beef loin
- olive oil
- salt
- onion
- bay leaves
- manteca (lard)
- parchment paper
Instructions
- Remove the bone from the loin and rub it thoroughly with olive oil. Season generously with salt. Cover the meat with strips of onion and scatter a few bay leaves over it.
- If the weather is cool, the loin may be left to marinate in this fashion for a couple of days.
- When ready to cook, pierce the loin lengthwise through its thickest part with a spit (asador). Wrap the meat in parchment paper that has been well soaked in manteca (lard). Roast over a strong fire, turning as needed to ensure even cooking.
- Serve with a sauce of your choice on the side.
