Roasted Beef Loin

Instructions

  1. Remove the bone from the loin and rub it thoroughly with olive oil. Season generously with salt. Cover the meat with strips of onion and scatter a few bay leaves over it.
  2. If the weather is cool, the loin may be left to marinate in this fashion for a couple of days.
  3. When ready to cook, pierce the loin lengthwise through its thickest part with a spit (asador). Wrap the meat in parchment paper that has been well soaked in manteca (lard). Roast over a strong fire, turning as needed to ensure even cooking.
  4. Serve with a sauce of your choice on the side.
