Artichoke Stalks

Ingredients
- artichoke stalks
- boiling water
- salt
- ham
- chorizo
- onion
- 1 spoonful flour
Instructions
- Clean the artichoke stalks well, cut them into pieces, and drop them into boiling water a very few at a time so that the water never stops boiling. Have a second pot of boiling water ready and move them into it so they lose their bitterness, seasoning with salt at that point. When they are cooked, drain away all the water; fry little pieces of ham and chorizo in a frying pan and throw them onto the vegetables. In that same fat fry onion, throw in a spoonful of flour and fry it, and when it browns pour it over the artichokes and let them stew a while. The book adds its own verdict: they are exquisite.
