Beef Rolls in the Style of the Princess (Bocadillos á la Princesa)

Ingredients
- good beef
- garlic, well ground
- cumin (cominos)
- pepper
- tocino (fatback/bacon), a little slice
- onion, chopped
- tomato
- maní (peanuts), well ground
- almonds, well ground
- walnuts, well ground
- salt
- butter
- onions, sliced in rounds
- tomatoes, seeded and cut in pieces
- 1/2 bottle good Priorato wine
- 1/2 bottle vinegar
- salt
- 1 oz grated chocolate
- parsley and hierba buena (mint) foliage
Instructions
- Cut good beef into portions and pound each flat without breaking it up; lay them on a cloth over a board.
- Rub with ground garlic and cumin, sprinkle with pepper, and place in each center a slice of tocino, chopped onion, tomato, and well-ground maní, almonds, walnuts, and salt.
- Roll up each piece and tie with white thread.
- Arrange in a porcelain-enameled pan over butter, sliced onions, seeded tomatoes, half a bottle of Priorato wine, half a bottle of vinegar, a little salt, and an ounce of grated chocolate.
- Cover and cook over low heat about two hours, adding a little hot water if it dries; let it dry slightly and serve garnished with parsley and mint.
