Roasted Woodcock

Instructions

  1. Pluck and clean the woodcock whole without opening it or removing the head. Wrap each bird in fresh tocino (cured pork belly). Season with salt and tie securely with kitchen twine. Place in a roasting pan and transfer to the oven.
  2. When the tocino is well browned, toast a large slice of bread on both sides and place it in the serving platter. Remove the twine from the woodcock and lay it on top of the bread. Pour the roasting juices over the bird and serve.
