Battered Kid Goat (Rebozado de Cabrito)

Instructions

  1. Marinate a quarter of kid goat two hours in an adobo of vinegar, oil, pepper, salt, oregano, and a touch of ground garlic.
  2. Make a firm paste of flour, six eggs, and enough water; knead well and rest one hour wrapped in a damp cloth.
  3. Roll the paste into a cake a little under a centimeter thick.
  4. Dry the kid leg, wrap it in the paste, and seal the edges with a little water.
  5. Cover with buttered strong paper and roast on the spit over moderate fire for three hours, then remove the paper so the paste browns.
  6. Serve with a separate sauce of bread crumb dissolved in tomato juice, thick raw-milk cream, one spoonful vinegar to three of olive oil, salt and pepper, beaten until combined.
