Roasted Woodcock (Another Formula)

  1. Pluck and clean the woodcock. Season it and wrap it in bacon strips (tocino), then roast until done.
  2. Once roasted, allow it to cool slightly. Remove the innards and mince them with jamón (Iberian ham). Pour a glass of sherry over this mixture and heat it gently for a short time on the fire.
  3. Separately, fry bread slices until golden brown and arrange them on a serving platter.
  4. Place the cooked woodcock on top of the fried bread. Pour the warm sauce over it, passing it through a strainer first, and serve.
