Roasted Woodcock (Another Formula)

Ingredients
- 1 woodcock
- bacon strips (tocino)
- jamón (Iberian ham)
- 1 glass sherry (jerez)
- bread slices
Instructions
- Pluck and clean the woodcock. Season it and wrap it in bacon strips (tocino), then roast until done.
- Once roasted, allow it to cool slightly. Remove the innards and mince them with jamón (Iberian ham). Pour a glass of sherry over this mixture and heat it gently for a short time on the fire.
- Separately, fry bread slices until golden brown and arrange them on a serving platter.
- Place the cooked woodcock on top of the fried bread. Pour the warm sauce over it, passing it through a strainer first, and serve.
