  1. Weigh out equal quantities of sugar and apples. Peel the apples and place them in boiling water. Cook until they are softened but still hold their shape. Transfer them to cold water and let them rest for twenty-four hours. Drain them well. Separately, prepare a syrup (almíbar) with the sugar and water. Once the syrup has cooled, combine it with the apples and place over low heat. Cook until the preserve reaches a strong setting point. The apples will remain whole and take on a beautiful color.
