Lemon Flan

  1. Heat the milk until it comes to a boil, then let it cool completely. Once cooled, stir in the grated lemon zest and sugar.
  2. In a separate bowl, beat the egg yolks thoroughly until very light and well-incorporated. Add the flour one tablespoon at a time while beating constantly, continuing to beat until the mixture is very fine and smooth.
  3. Combine the milk mixture with the egg yolk mixture, stirring well and always in the same direction. Prepare a mold by coating it with caramelized sugar (burned sugar).
  4. Pour the custard into the prepared mold and cook it in a bain-marie (water bath). Once cooked, place the mold briefly in the oven to brown the top.
