Lemon Flan

Ingredients
- 1 cuartillo milk
- 1 whole lemon
- 4 tablespoons sugar
- 10 whole egg yolks
- 1 tablespoon flour
Instructions
- Heat 1 cuartillo of milk until it comes to a boil, then let it cool completely.
- Once cooled, stir in the grated zest of one lemon and 4 tablespoons of sugar.
- In a separate bowl, beat 10 egg yolks thoroughly until very light and well-incorporated.
- Add one tablespoon of flour while beating constantly, continuing to beat until the mixture is very fine and smooth.
- Combine the milk mixture with the egg yolk mixture, stirring well and always in the same direction.
- Prepare a mold by coating it with caramelized sugar (burned sugar).
- Pour the custard into the prepared mold and cook it in a bain-marie (water bath).
- Once cooked, place the mold briefly in the oven to brown the top.
