Chicken Catalan Style

Ingredients
- 1 whole chicken
- 2–3 cloves garlic
- 1 handful parsley
- 1 whole onion
- 2 whole bell peppers (pimientos)
- 2–3 whole tomatoes
- 1 jícara olive oil
- 1 jícara white wine
- to taste spices
- a pinch nutmeg (nuez moscada)
- 2–3 tablespoons butter (mantequilla)
Instructions
- Prepare and season the chicken with salt. Arrange it in a heavy pot with the garlic, parsley, onion, bell peppers, and tomatoes.
- Add one jícara (approximately one cup) of olive oil and another of white wine. Season with spices and nutmeg, then add the butter.
- Place parchment paper (papel de estraza) beneath the lid to seal the pot. Bring to a simmer and cook until the chicken is tender and cooked through.
