Stewed Woodcock

Instructions

  1. Clean the woodcock thoroughly and remove the giblets and liver. Season with salt and fry in hot beef lard (manteca) until golden.
  2. In the same lard, fry the finely minced onion until softened. Pour over the woodcock one jícara of white wine and one jícara of broth (caldo).
  3. Crush the cooked liver and giblets in a mortar. Add a little chocolate to them and dissolve the mixture with some broth, then combine with the stewing birds.
  4. Cover and cook over low heat for about two hours, until the meat is tender and the sauce has thickened to its proper consistency.
