Stewed Woodcock

Ingredients
- woodcock
- salt
- manteca (beef lard)
- onion
- 1 jícara (about 3/4 cup) white wine
- 1 jícara (about 3/4 cup) caldo (broth)
- chocolate
Instructions
- Clean the woodcock thoroughly and remove the giblets and liver. Season with salt and fry in hot beef lard (manteca) until golden.
- In the same lard, fry the finely minced onion until softened. Pour over the woodcock one jícara of white wine and one jícara of broth (caldo).
- Crush the cooked liver and giblets in a mortar. Add a little chocolate to them and dissolve the mixture with some broth, then combine with the stewing birds.
- Cover and cook over low heat for about two hours, until the meat is tender and the sauce has thickened to its proper consistency.
