Squabs in Sauce

  1. After preparing the squabs, halve them. Heat beef lard in a pan and brown the squab halves in it. In the same lard, fry the onion, then lightly cook a small amount of flour, stirring to combine. Add the browned squab halves to the pan. Pour in one cup of broth and one cup of white wine. Let everything simmer gently until the squabs are cooked through.
