Ingredients
- hard-boiled eggs
- oil
- 1 small spoonful caldo (broth)
- 1 tablespoon vinegar
- mustard
- pepper
- salt
Instructions
- Hard-boil eggs and separate the whites from the yolks.
- Chop the whites very finely.
- In a bowl, mash the yolks with a wooden spoon, then gradually incorporate the oil thread by thread, stirring constantly.
- Once well combined, add salt, a small spoonful of caldo (broth), a tablespoon of vinegar, a pinch of mustard, and a pinch of pepper.
- Mix well, then fold in the chopped egg whites.
- Transfer to a serving bowl.
