Ingredients

Instructions

  1. Dice twenty onions, wash them in boiling water, and cook in a pan with half a pound of butter.
  2. Pound together hen fat and roasted hen meat with an equal amount of bread soaked in cream and squeezed.
  3. Dissolve everything with six raw egg yolks, salt, whole and ground pepper, and a cup of pure cream; add to the frying onions.
  4. Boil a minute, stirring; when cold, pack the mixture into inflated, dried sheep casings as for sausages.
