Peach Sorbet

Instructions

  1. Take very ripe peaches and cut them into pieces, discarding the pits. Place the pieces in a pot with water and bring to a brief boil.
  2. Pass the cooked peaches through a sieve, ensuring all the pulp goes through. Dissolve half a kilogram of sugar per kilogram of peaches in the fire with a little water, then add this syrup to the sieved peach pulp.
  3. Once everything is well mixed, allow it to cool completely, then freeze in a mold or garrafa (freezing container) until set.
