Soft Eggs (Custard)

Ingredients
- 1 small glass cold water
- 1 small glass sugar
- egg yolks
Instructions
- Combine one small glass of cold water with one small glass of sugar and place over heat until a syrup (almíbar) forms with sufficient body and concentration.
- In a separate bowl, beat the egg yolks. When the syrup has cooled nearly to room temperature, incorporate it into the yolks gradually while stirring constantly to ensure thorough mixing.
- Transfer the mixture to a double boiler (baño maría) and stir occasionally. As the eggs thicken, remove from heat and beat vigorously until the mixture is very fine and light.
