Stuffed Egg Whites (Alternative Recipe)

  1. Boil eggs, peel them, and halve them lengthwise. Remove the yolks and mash them together with salt, fresh parsley, and bread crumbs that have been soaked in milk to form a paste. Fill the egg white halves with this mixture. Dip the stuffed eggs in beaten egg, then roll them in bread crumbs to coat evenly. Fry them in hot oil or lard until golden on all sides.
  2. If vegetables are in season, cooked spinach (drained and fried) may be mixed into the yolk paste for additional flavor and color.
