Herb Omelette

  1. Break 6 to 8 eggs into a saucepan. Season with salt, then add the finely chopped herbs and a splash of water or milk. Beat everything together thoroughly.
  2. Heat a small amount of manteca in a frying pan until very hot. Pour in the egg mixture. Once the eggs begin to set, grip the pan by its handle and give a sharp horizontal push forward while extending your arm, then a second upward impulse as you draw it back so the omelette folds in half.
  3. Serve folded, golden, and steaming on a serving platter.
