  1. Heat manteca or oil in a large pan and fry the garlic, onion, parsley, peppers, and tomatoes together. Add the pieces of poultry and game, jamón, and loin of pork, and let them brown well.
  2. Once browned and softened, season with salt. Add the rice and water, stirring to combine.
  3. Separately, cook the legumes or vegetables—peas, artichokes, and asparagus tips—along with the spices until tender.
  4. Mix the cooked vegetables into the rice. Add the fried pieces of conger eel, angula, and any other seafood as desired.
  5. Transfer the paella to the oven and bake until the rice is golden and cooked through. Serve hot.
