Layered Egg Yolk and Meringue Dessert (Moka-Style Cake)

Ingredients
- 3 egg yolks
- 100 grams sugar
- 3 egg whites
- 100 grams sugar
- sponge cake (bizcocho)
- ground cinnamon
- ground chocolate
Instructions
- Beat the three egg yolks with 100 grams of sugar until pale and creamy.
- In a separate bowl, beat the three egg whites to stiff peaks (punto de nieve), then fold in the remaining 100 grams of sugar until the mixture resembles meringue.
- Spread the mixture in a plate as you would for a moka cake. Layer it as follows: a layer of the yolk paste, then a layer of sponge cake (bizcocho), then a layer of meringue. Repeat the layers, taking care to finish with the meringue layer on top.
- Dust the top generously with ground cinnamon, or preferably with ground chocolate.
