Budín (Steamed Pudding)

Ingredients
- Syrup (almíbar)
- 1 small handful Corinth raisins (pasas de Corinto)
- 1 ounce Almonds
- 5 Eggs
- 5 Sponge biscuits (bizcochos de espuma)
- 1 small glass Sherry (jerez)
Instructions
- Make a syrup reduced to a fairly concentrated point and set aside.
- Grate the almonds through a mill, then grind them thoroughly in a mortar. Add the five eggs to the same mortar and beat the mixture vigorously until well combined.
- Incorporate the ground almond and egg mixture into the syrup along with the Corinth raisins.
- Soak the five sponge biscuits in the small glass of sherry, then add them to the mixture. Stir everything together thoroughly.
- Pour the batter into a mold and place it in a bain-marie (water bath). Cook until set.
