Bocadillos (Spanish Cheese & Semolina Pastries)

Ingredients
- 100 g fine semolina
- 100 g wheat flour
- 1 L milk
- 100 g beef lard (manteca de vaca)
- 50 g grated Parmesan cheese
- 3 whole eggs
- to taste salt
- for dusting sugar and cinnamon
Instructions
- Dilute the fine semolina and wheat flour in a little milk. When a liter of milk begins to come to a boil, add the flour mixture gradually, stirring constantly until the paste becomes very thick. Remove from heat and work in the beef lard, grated Parmesan, eggs, and salt. Work the mixture vigorously near the heat, then allow it to cool completely.
- Spread the cooled paste on a table with a rolling pin and cut into small rounds. Arrange on a greased baking sheet and bake in the oven until golden. Dust with sugar and cinnamon as you remove them from the oven.
