Bocadillos (Spanish Cheese & Semolina Pastries)

Ingredients
- 100 g fine semolina
- 100 g wheat flour
- 1 L milk
- 100 g beef lard (manteca de vaca)
- 50 g grated Parmesan cheese
- 3 whole eggs
- to taste salt
- for dusting sugar and cinnamon
Instructions
- Dilute the fine semolina and wheat flour in a little milk.
- When a liter of milk begins to come to a boil, add the flour mixture gradually, stirring constantly until the paste becomes very thick.
- Remove from heat and work in the beef lard, grated Parmesan, eggs, and salt.
- Work the mixture vigorously near the heat, then allow it to cool completely.
- Spread the cooled paste on a table with a rolling pin and cut into small rounds.
- Arrange on a greased baking sheet and bake in the oven.
- Dust with sugar and cinnamon as you remove them from the oven.
