Roasted Chicken with Ham

Instructions

  1. Clean the chicken thoroughly. Tuck the wings inward and fold the legs toward the body. Once well-prepared and gently beaten to tenderize, dust the chicken evenly with fine salt and drizzle with lemon juice.
  2. Coat the chicken generously with manteca (lard). Place a slice of jamón (cured ham) on each side of the breast.
  3. Transfer the prepared chicken to an earthenware cazuela (cooking vessel) and place it in the oven to roast until golden and cooked through.
