Sábalo the Natural Way

Ingredients
- 1 sábalo (a large South American river shad)
- salt
- butter
- fine herbs
- pepper
- 1 lemon
- mustard
- tomato juice
- oil
- vinegar
- ají verde (green South American chili pepper)
Instructions
- Scale, open and clean the sábalo and soak it one hour in well-salted water.
- Stuff it with butter mixed with a handful of finely chopped fine herbs, salt and pepper.
- Put the same mixture into two cuts made along the backbone.
- Wrap the fish in buttered paper and cook on the grill over a moderate fire.
- When cooked, remove the paper and serve sprinkled with lemon juice, with a spicy sauce alongside — either mustard with tomato juice, or oil and vinegar with green ají.
