Loin with Rice

Ingredients
- 1 piece tender loin (lomo)
- salt
- garlic
- manteca (lard)
- 1 onion onion, minced
- rice
- boiling water
Instructions
- Season the loin with salt and garlic. Heat the manteca (lard) until very hot and sear the loin, turning it until it is half-cooked. Remove the loin from the manteca.
- In the same hot fat, fry the minced onion until golden. Add the rice and toss it in the fat for a moment to lightly toast it.
- Pour in boiling water and bring to a vigorous boil. As the water reduces and the rice begins to absorb the liquid, cut the loin into strips (rajas) and mix them into the rice.
- Continue cooking together until the rice is tender and the cooking is complete.
