Loin with Rice

Instructions

  1. Season the loin with salt and garlic. Heat the manteca (lard) until very hot and sear the loin, turning it until it is half-cooked. Remove the loin from the manteca.
  2. In the same hot fat, fry the minced onion until golden. Add the rice and toss it in the fat for a moment to lightly toast it.
  3. Pour in boiling water and bring to a vigorous boil. As the water reduces and the rice begins to absorb the liquid, cut the loin into strips (rajas) and mix them into the rice.
  4. Continue cooking together until the rice is tender and the cooking is complete.
