Eggs with Cheese

Ingredients
- cheese, grated
- bread crumbs
- eggs
- salt
- pepper
- nutmeg
- cheese, grated
Instructions
- Make a bed (costrada) composed of equal parts grated cheese and bread crumbs.
- Crack the eggs directly onto this mixture.
- Sprinkle with salt, pepper, nutmeg, and additional grated cheese.
- Brown the surface with a hot spatula or iron (pala candente) until golden.
