Salmon with Olives

Ingredients
- salmon fillet or steak
- olives, pitted
- fresh parsley
- onion
- a few grains black pepper
- olive oil
- vinegar
- manteca or butter
- hard-boiled egg
- tartar sauce or yellow sauce (salsa tártara o amarilla)
Instructions
- Do not wash the salmon; instead, wipe it thoroughly with a cloth. Once cleaned, place the salmon fillet in a baking dish along with the pitted olives, parsley, and onion, all finely chopped. Add a few grains of black pepper, olive oil, vinegar, and a small amount of manteca (lard) or butter.
- Bake in a moderate oven for about fifteen minutes. When the salmon is cooked through, remove it from the oven and transfer to a serving platter. Garnish generously with finely chopped hard-boiled egg on top.
- Serve with tartar sauce or yellow sauce on the side.
