Salmon with Olives

Instructions

  1. Do not wash the salmon; instead, wipe it thoroughly with a cloth.
  2. Once cleaned, place the salmon fillet in a baking dish along with the pitted olives, parsley, and onion, all finely chopped.
  3. Add a few grains of black pepper, olive oil, vinegar, and a small amount of manteca (lard) or butter.
  4. Bake in a moderate oven for about fifteen minutes.
  5. When the salmon is cooked through, remove it from the oven and transfer to a serving platter.
  6. Garnish generously with finely chopped hard-boiled egg on top.
  7. Serve with tartar sauce or yellow sauce on the side.
