Candied Egg Yolks

Ingredients
- egg yolks
- sugar syrup (almíbar)
- fine sugar
- butter (mantequilla)
- caramel syrup (almíbar a punto de caramelo)
Instructions
- Place unbeaten egg yolks in a heavy-bottomed pot. Gradually add the somewhat strong sugar syrup (almíbar), stirring to combine. Set over low heat and cook, stirring often, until the mixture sets and becomes thick. Transfer to a serving plate to cool completely.
- Once cooled, work the mixture with fine sugar and roll it into small portions resembling whole egg yolks. Place these on a tin greased with butter.
- Bring the caramel-stage syrup (almíbar a punto de caramelo) to temperature. Working quickly, dip each yolk into the caramel and immediately remove it to cool and set.
