  1. Bring a pot of salted water to a boil. Cook the artichoke hearts, chicken livers, lemon, and spinach leaves together until all are tender.
  2. Drain and sauté the cooked mixture in butter until well combined.
  3. Crack two eggs into an individual baking dish (cocotera). Top with the sautéed vegetable and liver mixture, then sprinkle generously with grated cheese.
  4. Place under the broiler or in a hot oven until the top is golden and gratinéed.
  5. Just before serving, cut a thick slice from a large orange. Pierce the slice with the handle of the cocotera and transfer the entire dish to a metal serving platter lined with a napkin, with the orange slice serving as both handle guard and garnish.
