Leaven Biscuit

Ingredients
- 1 tea-cup leaven from light bread
- 0.5 pint flour
- 1 teaspoonful salt
- 1 quart flour
- 1 level teaspoonful soda
- 1 tablespoonful lard
- 0.5 tablespoonful butter
Instructions
- Save a piece of leaven from light bread you mix or make up over night, about the size of a tea-cup.
- Mix the leaven soft in water.
- Add half a pint of flour to the leaven mixture and one teaspoonful of salt.
- Set the leaven mixture to rise over night.
- Next morning, take one level quart of flour and put a level teaspoonful of soda into it.
- Sift the flour and soda together.
- Rub one tablespoonful of lard and half a tablespoonful of butter into the flour until thoroughly mixed.
- Add the risen leaven mixture to the flour mixture and work it together with your hands until light.
- Make off the dough into biscuits and put them to rise in a baking pan for twenty minutes.
- Bake brown.
