Partridge in Chocolate and Toast Sauce (Third Formula)

Ingredients

Instructions

  1. Place the cleaned partridges in a pot.
  2. Add the olive oil, white wine, vinegar, and water.
  3. Add the whole head of garlic, onion sliced into rings, cloves, black pepper, bay leaf, parsley sprig, and salt.
  4. Place a sheet of brown paper (with water) under the pot to regulate heat gently.
  5. Cook until the partridges are cooked.
  6. When cooked through, remove the two partridges to a serving dish.
  7. Strain the cooking liquid and thicken it with chocolate and toasted, ground bread crust.
  8. The partridge prepared this way is extremely flavorful.
