Partridge in Chocolate and Toast Sauce (Third Formula)

Ingredients
- 2 partridges
- 2 jícaras olive oil
- 1 jícara white wine
- 1 tablespoon vinegar
- 4 jícaras water
- 1 head garlic
- 1 onion
- 2 grains cloves
- 4 grains black pepper
- 1 leaf bay leaf
- 1 sprig parsley
- salt
- chocolate
- bread crust
Instructions
- Place the cleaned partridges in a pot. Add the olive oil, white wine, vinegar, and water. Add the whole head of garlic, onion sliced into rings, cloves, black pepper, bay leaf, parsley sprig, and salt.
- Place a sheet of brown paper (with water) under the pot to regulate heat gently. Cook until the partridges are tender.
- When cooked through, remove the two partridges to a serving dish. Strain the cooking liquid and thicken it with chocolate and toasted, ground bread crust. The partridge prepared this way is extremely flavorful.
