  1. Place the cleaned partridges in a pot. Add the olive oil, white wine, vinegar, and water. Add the whole head of garlic, onion sliced into rings, cloves, black pepper, bay leaf, parsley sprig, and salt.
  2. Place a sheet of brown paper (with water) under the pot to regulate heat gently. Cook until the partridges are tender.
  3. When cooked through, remove the two partridges to a serving dish. Strain the cooking liquid and thicken it with chocolate and toasted, ground bread crust. The partridge prepared this way is extremely flavorful.
