Roasted Chicken

Instructions

  1. Prepare and season the chicken well with salt and pepper. Place it in a roasting pan.
  2. Cover the breast with white paper that has been coated with pork lard (manteca de cerdo). This protects the meat from drying.
  3. Roast in the oven, basting frequently—about once a minute—with a tablespoon of the chicken's own fat from the pan.
  4. When the chicken is nearly cooked through, add a small amount of broth to the pan.
  5. Once fully roasted, cut the bird into pieces. Pour over the chicken pieces a little of the pan juices, making sure to remove all excess fat first.
