Pork Head Cheese (Queso de Cabeza de Cerdo)

Ingredients
- 1 whole pork head
- to taste salt
- to taste black pepper, ground
- to taste clove, ground
- a generous amount whole black peppercorns
Instructions
- Wrap the pork head in clean cloth and cook in water until the bones come loose and can be easily separated from the meat. Remove all bones and mince the meat very finely.
- Season the minced meat generously with salt, ground black pepper, ground clove, and whole peppercorns. Mix everything thoroughly.
- Cook this seasoned meat paste in the same water in which the head was initially boiled. When it has cooked sufficiently, use a skimming spoon to fill molds with the paste. Set the molds in a cool place for three to four days and nights.
- Once set, remove from the molds in the same manner as frozen cheese (queso helado).
