Braised Lamb Breast

Ingredients

Instructions

  1. Cut the lamb breast into long pieces.
  2. Arrange pieces of tocino (salt pork belly) in a cooking pot.
  3. Add slices of jamón (cured ham) to the pot.
  4. Place the lamb pieces on top.
  5. Cover the lamb with more tocino.
  6. Add sliced carrots to the pot.
  7. Add cut onions to the pot.
  8. Add bay leaf and thyme to the pot.
  9. Pour in a regular amount of caldo (broth).
  10. Braise slowly for about three hours with heat from both above and below, using a lid and fire underneath.
  11. Drain the meat.
  12. Place the meat on a serving platter.
  13. Surround with spinach, sorrel, or endive in the center.
