Braised Lamb Breast

Ingredients
- Lamb breast
- Tocino (salt pork belly)
- Jamón (cured ham)
- Carrots
- Onions
- Bay leaf
- Thyme
- a regular amount Caldo (broth)
Instructions
- Cut the lamb breast into long pieces.
- Arrange pieces of tocino (salt pork belly) in a cooking pot.
- Add slices of jamón (cured ham) to the pot.
- Place the lamb pieces on top.
- Cover the lamb with more tocino.
- Add sliced carrots to the pot.
- Add cut onions to the pot.
- Add bay leaf and thyme to the pot.
- Pour in a regular amount of caldo (broth).
- Braise slowly for about three hours with heat from both above and below, using a lid and fire underneath.
- Drain the meat.
- Place the meat on a serving platter.
- Surround with spinach, sorrel, or endive in the center.
