Eggs Caprice (Molded Rice with Brussels Sprouts and Fried Eggs)

  1. Prepare a well-seasoned white rice. Coat a ring mold (one with a hole in the center) with manteca (lard) and form the rice into it.
  2. Boil the Brussels sprouts in salted water until tender. Drain them thoroughly and squeeze out excess moisture. Fry the sprouts in beef lard with minced garlic and chopped parsley.
  3. Turn the rice mold out onto a serving platter. Fill the center hole with the fried Brussels sprout mixture. Top with fried eggs.
  4. Garnish the edge of the platter with hard-boiled eggs cut in half and fried potatoes.
