Eggs Caprice (Molded Rice with Brussels Sprouts and Fried Eggs)

Ingredients
- rice
- manteca (lard)
- Brussels sprouts
- beef lard
- garlic
- parsley
- eggs
- potatoes
Instructions
- Prepare a well-seasoned white rice. Coat a ring mold (one with a hole in the center) with manteca (lard) and form the rice into it.
- Boil the Brussels sprouts in salted water until tender. Drain them thoroughly and squeeze out excess moisture. Fry the sprouts in beef lard with minced garlic and chopped parsley.
- Turn the rice mold out onto a serving platter. Fill the center hole with the fried Brussels sprout mixture. Top with fried eggs.
- Garnish the edge of the platter with hard-boiled eggs cut in half and fried potatoes.
