Roasted Turkey Stuffed Catalan Style

Instructions
- Clean the turkeys and remove the breastbone. Dust with salt and ground white pepper.
- Prepare the stuffing: Cook the chestnuts, dried apricots, and prunes. Fry the sausages, jamón, and pine nuts. Combine the cooked dried fruits with the fried meats in manteca de cerdo (pork lard) along with chopped onion. Season the mixture with white wine, spices, ground cinnamon, nutmeg, and white pepper. Once everything is well combined, fill the turkey cavities with this stuffing. Tie the turkeys closed.
- Place the stuffed turkeys in a roasting pan with manteca de cerdo, salt, aromatic herbs, and vegetables. Roast at moderate heat. When half-cooked, baste with white wine and caldo (broth).
- Serve the turkey surrounded by the vegetables and pan juices from the roasting pan.
