Improvised Prawns

Instructions

  1. Cook the prawns in water seasoned with salt and a small bunch of fine herbs.
  2. Drain, separate heads from tails; peel and wash the tails and arrange them in a dish.
  3. Pound the heads in a mortar, loosen the paste in some cooking broth, and strain through a sieve.
  4. Fry two chopped onions in butter with parsley and crushed garlic, plus the juice of crushed tomatoes, salt and pepper.
  5. When the onion colors, add the strained head broth, two egg yolks, and grated Parmesan; cook until thick.
  6. Add a half teaspoon of powdered sugar to offset the cheese's salt, then pour the boiling sauce over the tails and serve hot.
