Poached Eggs Crystal Palace Style

  1. Heat manteca (lard) in a saucepan over medium heat. Add the finely diced shallots and mushrooms, cooking gently until tender. Stir in the diced tomato and chopped parsley. Season to taste with salt and white pepper. Mix well and keep the mixture warm.
  2. Poach the eggs until set. Trim the egg whites neatly. Arrange the poached eggs on a serving platter, placing each one atop a freshly fried bread crouton. Cover each egg with the warm shallot and mushroom mixture and serve at once.
