Sweet Cucumber Pickles

Ingredients

Instructions

  1. Slice the pre-pickled cucumbers either lengthwise into four pieces or crosswise to the thickness of a silver half-dollar.
  2. In an earthen jar, place a three-inch-thick layer of sliced pickles.
  3. Cover that layer completely with granulated sugar.
  4. Repeat the process of three-inch layers of pickles alternating with sugar until all sliced pickles are used.
  5. Let them remain under the sugar for twenty-four hours.
  6. After twenty-four hours, remove the pickles from the sugar and place them in jars.
  7. Combine one quart of sugar with one quart of clear water in a pot.
  8. Boil the mixture down to one quart of pure syrup.
  9. Add one teacup of wine vinegar to one pint of the syrup and stir to combine.
  10. Pour the vinegar-sweetened syrup over the pickles in the jars until they are thoroughly covered.
