  1. Peel the potatoes and cut them into chunks. Cook them in salted water until tender. Drain the cooked potatoes and mash them together with a tablespoon of manteca until they reach the consistency of a custard or thick cream.
  2. In a separate pan, heat olive oil and fry it with garlic until fragrant. Pour this garlic-infused oil over the mashed potatoes and combine well.
