Instructions

  1. Peel the potatoes and cut them into chunks.
  2. Cook them in salted water until cooked through.
  3. Drain the cooked potatoes and mash them together with a tablespoon of manteca until they reach the consistency of a custard or thick cream.
  4. In a separate pan, heat olive oil and fry it with garlic until fragrant.
  5. Pour this garlic-infused oil over the mashed potatoes and combine well.
